tasty thursday 

okay, so my plan was to regularly post new recipes on tuesdays, but that failed. anyway, it's another day that starts with "t" so i will share my latest delicious discovery. i've usually cooked acorn squash with brown sugar and butter, but i think this will be the way from now on (unless i make soup).

honey-spiced acorn squash

ingredients:
2 acorn squash
1/4 cup butter (1/2 stick)
1/3 cup honey
1/2 tsp salt
1/4 tsp cinnamon
1/4 tsp ginger

preheat oven to 375F. cut acorn squash in half and clean out seeds
and stringy stuff in middle. place squash halves hollow side down in
baking pan filled with 1/2 inch water. bake for 30 minutes.

in a small saucepan, combine other ingredients. bring to a
boil. drain excess water from baking pan. fill cavities of squash
with honey mixture. bake for 15 minutes, basting with sauce.

make sure you keep the sauce in the squash while you're eating it, because you can keep dipping the squash as you eat it. i used wildflower honey, which is a little bit darker and went really well with the squash. i'm sure other honeys would be just a good. also, you can serve this as a side dish, but i ate it as a main dish with some cheese and crackers (althought some crusty bread would have been awesome). m gave me a cheese of the month club for my birthday, so i had some fromage de savoie. this is a little bit too much like brie to be just a table cheese (good for a fruit and cheese plate though), but it really complemented the meal since the honey sauce was so sweet.
